No Bake Peanut butter Chocolate Oat Cookies

One of my favorite snacks (Mmmmmm, gonna make some later):

Serves: Makes: 24 large or 48 small cookies

Preparation time: 5 minutes

Ingredients:

1/2 cup margarine (Earth Balance)
2 cups sugar (white or brown)
1/2 cup soy milk
4 tablespoon unsweetened cocoa powder
1/2 cup peanut butter
1/2 teaspoon vanilla extract
3 cups quick cooking oats

Directions:

I like to make this recipe when I want something sweet in a hurry. Vegans and non-vegans alike love these!

1. In a large pot, bring margarine, sugar, milk and cocoa to a boil. Stirring constantly, let boil for 1-2 minutes until mixture is completely melted. Do not over boil.

2. Take mixture off heat and stir in peanut butter and vanilla until completely melted. Stir in oats.

3. Drop teaspoonfuls of the mixture onto cookie sheets lined with wax or parchment paper and allow to cool. When cool, turn cookies over to dry the bottoms.

4. Store in an airtight plastic container in the refrigerator.

DIY Terry Pillows

Our hand towel is just the right size (31 1/2 by 18 inches) to cover a boudoir pillow (12 by 16 inches). Place towel faceup. Fold left end 2 1/2 inches past middle. Fold right end toward middle, overlapping left side by 5 inches. Pin sides. Sew top and bottom edges, leaving 1/2-inch seam allowance. Turn inside out; insert pillow. For other sizes, determine sham dimensions by adding 1 inch to both length and width of pillow. Use a towel that is at least 1 inch wider and twice as long plus 5 1/2 inches as the finished sham. If using a larger towel, cut to size (trim excess from one side so you'll have only one unfinished end). If you make adjustments to length, add a 1/2-inch hem.

Pineapple-Mango Salsa with Baked Flour Tortilla Chips

Serves 12 (1/4 cup per serving)

Ingredients:

1 mango, peeled and cubed
1 (8 ounce) can pineapple tidbits, packed in juice, drained
1/3 cup chopped red bell pepper
1/4 cup sliced green onions
2 tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro
1 teaspoon red pepper flakes, (optional)
1/4 teaspoon salt
2 packages flour tortillas (about 6-inches in diameter)
1/2 cup (1 stick) butter OR margarine, melted
Salt to taste

Directions:

1. In medium bowl, stir together all ingredients except tortilla chips ingredients; cover and refrigerate to blend flavors until ready serve. (Prepare and refrigerate this colorful salsa up to 1 day ahead. If time is short, serve with purchased tortilla chips. )
2. For Baked Flour Tortillas Chips: Place tortillas in a single layer on baking sheets coated with cooking spray. Brush lightly with butter on both sides. Using a knife or kitchen shears, cut each tortilla into 4 wedges. Sprinkle with salt. Bake at 375 degrees F. for 8 to 10 minutes or until crisp and light brown. Cool slightly (chips will continue to crisp as they cool). Serve warm or cool. Store baked chips in a tightly covered container for up to 3 weeks.

Samosa Quesadillas

Serves: 4

Preparation time: 20 minutes

Ingredients:

2 Tablespoon scallion, diced
2 cups mashed potatoes - perfect with leftovers
1/2 cup peas (fresh or frozen-thawed)
1 1/2 teaspoon curry powder (more if desired)
4 8-inch Tortilla wraps
1 Tablespoon Olive Oil
salt and pepper to taste

Directions:

Heat oil in pan and add scallion. Cook until tender. Add mashed potatoes, peas, salt/pepper and curry powder and mix together until heated thoroughly. Add more curry if desired. In a skillet, spray with oil and lay down tortilla. Scoop potato mix onto half of the tortilla and fold over. Cook 1-2 minutes on each side, until golden brown. Put on plate, cut into fourths and serve. Repeat for the others.

Serve with pineapple/mango salsa!

The DYMO Labelmaker is great for any modern retro mama! I love labels.

When it comes to making school lunches, you often have 100 things open. Just pop a label that says the date you opened the package! Cheese, meats, bread, and all that stuff. I always forget when the past due date is on the meat.

Covering school books is just a drag. Slap a label on that book! No more trying to remember if math is blue or science is red! Or, They all have the same cover!? LOL. Us old school folks just used plain 'ol paper bags.

One of the best ways to help your child stay organized is to prepare sets of folders for him or her at the beginning of the semester. Print labels for each subject. Or if younger, label one folder for pictures, work, and mom and dad.

If your child has allergies to certain foods or conditions (such as heavy dust), a good idea is to print out labels for him/or her that alert the teacher to this fact. You can also label medicine. If the child takes medicine everyday, you can label the date, so the teacher knows.

There are so many uses for the DYMO Labelmaker. I'd have way too much fun with it! The whole house would be label friendly. *oven* *door* *juice* *bathroom* *milk* *dirty clothes* *clean clothes* *soap* LOL.

(Vegan) Strawberry Shortcakes

Serves 24
Preparation time:About one hour

Ingredients:

1 tablespoon vinegar
1 1/2 cups soy milk
2 cups + 2 tablespoons all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup + 2 tablespoons sugar
1/2 cup oil
1 1/4 teaspoons vanilla extract
1/2 teaspoon coconut extract
1 pound diced strawberries
enough sugar to coat strawberries (About a 1/4 Cup)
favorite vanilla frosting

Directions:

1) Preheat oven to 350 degrees F. Prepare 24 muffin tins with lightly sprayed liners. Put the diced strawberries in a bowl and coat with sugar. Once the sugar is somewhat incorporated place the bowl in the fridge.

2) Pour the vinegar into a measuring cup, and add just enough soymilk to reach 1 1/2 cups. Set aside.

3) Sift together dry ingredients.

4) Add the wet ingredients to the dry ingredients and wisk just enough to combine.

5) Fill each tin about halfway full.

6) Bake for 15-20 minutes or until lightly golden. Let cool.

7) After they've cooled frost each cupcake and top with a generous teaspoon of strawberries including that oh so yummy juice.

Eyebrowz

Eyebrowz makes eyebrow stencils for people with little hair, light hair, or no hair. I highly recommend them. I having been drawing on my eyebrows for over 10 years. ~~Not that I am old.~~

I use to use eyeliner pencils. Yep, I know they make eyebrow pencils, but I like cheap! Just like hair, You can have a bad eyebrow day! LOL. They just won't go on straight.

I found Eyebrowz a year or two ago. I bought the Dark Haired Filling in Kit-#4 (in the pic above). I personally like thin eyebrows.

Their stencils are based on Celebs. Dr#1- Inspired by Drew Barrymore, Ct#1- Inspired by Heather Locklear, and Je#1-Inspired by Jennifer Aniston are my favs. They are pretty much the same shape with a different thickness. You get 6 stencils in the pack.

You also get 2 colors of powder. I have black and brown. I like black the best. The pack includes brushes and a band to hold the stencil in place too!

I don't use the head band or white pencil. I just hold the stencil up where I want it, draw my eyebrow on with an eyeliner pencil, and go over the eyebrow with the powder. The powder makes the brow look more natural. Well, it's suppose too. I prefer mine to look like the pinup girl's eyebrows where you can tell they're drawn on.

Once you use the stencils for a while you get the hang of it. I can draw my eyebrows on ~~almost~~ perfectly.

The kit is $36. It's been 2 years or so since I bought mine. It looks like I just bought the powder, so you won't need to buy makeup for a while. Just maybe an eyebrow pencil or the white liner they give you.

Park West Art Gallery has some very nice art. I am an avid art lover. Home to the largest collection of fine art in the world, Park West Gallery conducts fine art auctions throughout the United States and Canada.

I really like Itzchak Tarkay's portrait of women in a cafe. Tarkay has many pieces of art depicting women. Luckily, the Park West Gallery is having a Summer Sale!

You can take a tour of the Gallery in Michigan on the site, which is really cool. The tour is pretty in detail. They have more than 400 experts.

There are more than 15 artist's personal sites. I sure am going to check out Tarkay's! Charles Lee's art is said to be pleasing to the eyes too.
